Mini white chocolate and caviar bars.
The mini chocolate bars (4 x 5 g) are made with Zephyr white chocolate from Cacao Barry and Calvisius Oscietra caviar which has freeze dried until crisp. Your mini chocolate bars can be stored and eaten at room temperature.
Pairing white chocolate and caviar isn’t new. In 1999 Heston Blumenthal (Fat Duck, UK) first served this combination. Although it may seem like an odd flavour pairing, using molecular profiling, both ingredients analyzed individually showed 2 or more components that were similar, therefore making it possible to pair the two ingredients successfully.
